Bianco di Chioggia is one of the most recent additions to the radicchio family and a great introduction for skeptics of our beloved bitter greens. Identified and bred in the 1990's from an all green sport growing in a field of heading variegated type "Variegata di Chioggia" (similar to "Lusia") Bianco's green round loose heads fade to a blanched golden heart and are among the least bitter members of the family. Like Chioggia types it has a diffuse ribbing system to the leaves rather than a thick central midrib making for a tender leaf for raw salads and preparations and great for sandwiches. Its sweetness also, similar to sugar loaf, makes it a great choice to halve and grill. "Palla di Neve" means snowball in Italian.
