Hot Pepper, 'Sugar Rush Peach'
(Capsicum baccatum) We’ve heard a lot about this pepper over the past couple of years. An aji type bred in the epicenter of chili biodiversity…Wales (!), sugar rush has garnered a strong following for its beautiful color, spicy but manageable heat, and, most notably, its very sweet and citrusy flesh. Plants can grow 4-5’ and, while slow to color, are extremely productive. Like many of the baccatum species peppers, they require a longer season, but we’ve found Sugar Rush Peach to mature in an average PNW season (whatever that is anymore). They’d benefit from space in the greenhouse in cooler areas. The sweet flesh brings a unique dimension to hot sauces and spicy ferments.

SOWING:
Indoors, 6-8 weeks before your last frost date.
Transplant out after danger of frost (50+ nighttime temps).

FERTILITY:
Moderate-Heavy. Prefer well-drained, fertile soil with ample phosphorous and calcium (too little calcium can cause blossom end rot) and a pH between 6.5-6.8.
ADDITIONAL NOTES:
Pepper seeds germinate very slowly and poorly in cold soil. Keep soil temperatures at 80-90F while germinating, and grow plants at 70F.
After transplanting, use a floating row cover to keep plants warmer during the day and protect them from cold nights. Remove as temperatures increase. Too much heat can cause blossom drop.
Taller varieties benefit from staking.
Harvesting ripe fruit consistently encourages fruit production.
